Description
The breast is almost triangular in shape. It is a meat famous for its tenderness and juiciness. The history of the Angus breed in Brazilian fields began with the first animal record in 1906, with the Menelik bull coming from Uruguay. The Angus beef has a higher degree, when compared to the nelori, of marbling the meat. Marbling corresponds to the amount of fat interspersed. The higher degree of marbling gives a more buttery flavor to the meat and increases juiciness.
